Every region in India makes Puri bhaji differently. Even in Maharashtra, there are various ways of making puri bhaji. Masala puri, god puri, Batata paatal bhaji, batata sukhi bhaji, batata-tamata rassa bhaji, and many more.
Being Maharashtrian, my husband and I love our native food. If you guys have been here for a while, you also know that I love to cook. Nothing fancy, just simple everyday meals. So, today, I’m going to share my family’s favorite Maharashtrian style puri bhaji – sukhi batata bhaji and puri.
Starting off let me tell you:
What’s is puri bhaji?
Puri is a flat round deep-fried puffed bread made out of whole wheat flour (without using yeast or other raising agents).
It is served with varied side dishes such as different fried vegetables, vegetarian and nonvegetarian (chicken/meat) gravies. And also, sweet dishes such as aamras, shrikhand, amrakhand, basundi, suji halwa, gajar halwa, etc.,
Bhaji is a vegetable side dish cooked in a fried form, dry or gravy.
Maharashtrian Style Puri Bhaji
INGREDIENTS:
For Puri
Whole wheat flour 2 cups
Water 1/2 cup (or as needed for kneading)
Oil 1 tablespoon (for kneading)
Salt to taste
Oil (for deep frying)
For Batata Sukhi Bhaji
Potatoes (4 medium-size)
Mustard seeds 1-1 and 1/2 teaspoon
Curry Leaves 1 strand (washed and dried)
Green Chillies 3 medium (chopped)
Turmeric powder 1/4 teaspoon
Salt to taste
METHOD:
To Make Puri
Take flour in a wide, slightly deep vessel.
Add salt and oil to it and start mixing everything together.
Add water little by little as you knead the dough.
Knead the dough really well until it turns medium-soft.
Make small balls out of the dough.
Take some dry flour on the rolling board, take a ball, flatten it with the palms, apply flour on both sides, and roll out with the help of a rolling pin. (ideal size is 4 inch but you may choose for yourself)
Complete rolling out all the balls.
Heat oil for deep frying. Wait until the oil is hot enough.
Start by placing the flatten puris, one at a time.
Slightly dip the puri with a frying spoon, for the puri to cook properly.
Flip when one side is cooked well. (Be safe while frying)
To Make Bhaji
Wash the potatoes nicely and boil them, adding a little salt. (I pressure cook them to make the process faster)
Once done, remove them from the water and set aside to cool.
Now peel and cut the potatoes into small pieces.

Heat oil in a pan.
Add mustard seeds and let it crackle.
Add curry leaves, green chilies, turmeric powder, and salt.
Give it a good mix.
Add chopped potatoes and combine everything well together.
Cover and cook till done. Keep stirring in between to avoid burning.
